I admitted in my last post that I’ve never really been a huge fan of hummus. I mean, it’s okay, I can eat it, it’s good, but it’s never been something I couldn’t live without – but now I’m on a hummus kick! I’ve crossed over to the other side. LOL ;-)

You all loved my Jalapeño Hummus Recipe so much, I just had to share my sun-dried tomato hummus recipe with you. It was nice to know I’m not the only one who hasn’t always been madly in love with hummus. But I’m so glad I made this yesterday! Each bite has such a burst of flavor: I taste the sun-dried tomatoes, parsley, and garlic in every. single. bite. It tastes so fresh and delicious. I don’t mean to brag, but I’m just proud of myself for making such yummy hummus!! :-D

Sun-Dried Tomato Hummus Recipe

Yields 2 cups

Ingredients:

  • 1 can garbanzo beans (aka chickpeas) rinsed and drained
  • 3 tablespoons sun-dried tomatoes
  • 2 garlic cloves
  • juice from 1 lemon
  • sea salt and pepper to taste
  • 2 tablespoons tahini
  • 1 (and a half) tablespoons olive oil (from the sun-dried tomato jar)
  • 1 tablespoon parsley (I added an extra teaspoon after a taste test.)

Directions:

  1. Toss all ingredients into the food processor and let ‘er rip ‘till it’s the consistency you like.
  2. Do a taste test to make sure you don’t want to add anything else.
  3. Serve immediately or store in the fridge.
  4. Enjoy!

Note:

You can absolutely leave the garlic out of this recipe. I heart garlic, but many of you do not. ;-)

 

 

Let’s Talk Revolution

How do you feel about Jamie Oliver’s Food Revolution? Are you following his show? Do you know who he even is? I’ve known about him for a few years, and always enjoyed his food shows that I’ve seen. Since I first saw him on TV, I loved that he promotes fresh produce and real food. (You can read his food philosophy here.) He isn’t promoting anything outrageous – just sensible meals and snacks created from real food.

Here’s a quote from him (from his site) to better help you understand his Food Revolution Mission – in case you haven’t heard about it yet:

Changing my habits to eating real food is how I lost over 100 pounds. So I absolutely believe in Jamie’s mission. I personally admire his courage, passion, and believe he has a genuine, soft heart. And I can’t believe how much resistance he’s been up against for this whole thing. Isn’t it amazing how so many people fight healthy eating/living?

And as I write this, there are almost 80,000 signatures on the petition Jamie plans on presenting to the White House. Would you consider signing? I’m going to I did!

    Wow, that hummus looks quite tasty. I like you am not crazy about hummus, but your recipe sounds like something, I’d love to give a try.

    I watched a little of Jamie Oliver’s show last night. I was amazed at how the children didn’t know the names of fresh produce. I blame the parents for that. I think it is great that he is going in the schools trying to make changes, but I don’t believe it starts there. It starts with what the children are being fed in the homes.

    I think what Jamie is doing is an awesome thing. I hope that people get the message.

    I know! I couldn’t believe they thought a tomato was a potato – and they thought it was okay to eat fries as a veggie. Ugh.

    Oh, I know the schools aren’t the only ones to blame. Yes, everything begins at home. I grew up watching my grandparents and parents growing fresh produce in their gardens and I learned what they were and how to prepare them – both raw and cooked versions. I’m thankful for that.

    I think Jamie is focusing on schools because kids spend so much time there, ya know?

    I’ve tried to remember how many veggies I had when I was in school. Seems like I do remember pizza, burgers, pasta, etc. – and desserts! ;-) – more than I remember veggies. But I do believe they served them. And I think I even remember them serving salads with spaghetti some days, etc.

    But I’m nearly 35 now so that was a few years ago. LOL

    Thanks for sharing your thoughts. And, yes, I hope folks get the message too – I think it’s a worthy one!

    I watched both episodes that have aired today and I really believe in what he is doing. Some of the things he has uncovered in the schools is unbelievable. It makes me sad that his fresh food was not meeting their “standards” but I do have hope that he can provoke change within that community and hopefully throughout our country. I do not have children but as someone raised in a home on food like those people in WV, I know without a doubt that good food habits must start at home and school should reinforce what is taught. I hope this show can get that ball rolling.

    And I know! HIS food wasn’t meeting standards??!! I was like: but it’s FRESH and REAL!! Sheesh!!!

    I love hummus! But I go through phases with it, too. My current hummus favorite is red pepper hummus – it’s blended with red pepper flake. Sundried tomato hummus is good too, though.

    I did try storebought red pepper hummus – but haven’t made my own yet. I plan on doing that pretty soon. But I decided to use my red pepper as a dipper this time. LOL

    No, I haven’t tried the raw zucchini hummus yet. I’ve been meaning to for a long time, just never have. I do have some zucchini on hand, though, so I think I’ll use it to make my next batch of hummus! :-D

    as for jaime, havent seen it but have read his stuff before and am 100% on board. you cant feed people processed food that michael pollan wouldnt even call food, i.e. chips, kiddie snack packs, you name it, it’s so preservatived and processed, it could last for a decade in a little pouch, but you cant feed that to kids/adults and not expect obseity and a major health crisis. here’s to a shake up and a wake up call in this country!

    Welcome to the other side!! I love hummus and have made it a few times. All I have is a tiny food processor thought and it is hard to do in that thing. When I get a big girl one I will be whipping it up all the time!

    I set the alarm on my cell phone to remind me when that Jamie Oliver show was on! I couldn’t wait to watch it with my daughter and we both loved it. I agree 100% with what he is saying.
