Why Meatless Monday?
I’ve been mostly meatless for the past several years (everything from 100% raw and not eating meat at all, to high-raw and having a little salmon, tuna, or small amount of local bison), but I’ve never joined in on the “Meatless Monday” movement. No time like the present, eh?!
Besides, I’ve been really enjoying Recycle Your Day’s Meatless Monday posts for a while now. I’m going to do my best to participate each Monday!
At first, I thought I’d have to skip my first Monday because everything I thought of was either a) boring or b) something I’ve already posted about – such as:
I know a lot of you have heard read me singing the praises of my latest favorite drink (Rainbow Grass) a LOT lately, right? If not, you can check out my post about it (and nab the free recipe here).

So, I’ve been drinking the Rainbow Chard – but I haven’t been eating it. Of course, I’ve eaten it before (a lot) but I’ve been consuming it via jar – and my fave, eco-friendly, glass straws – so far this year. Best thing? It’s growing in my garden! Fresh, raw, heirloom, organic rainbow chard. YUM!
And as I pondered how I’d wow y’all with a fantabulous Meatless Monday recipe, it happened: I was struck with the inspiration for…
Raw Rainbow Wraps
Tuna Fish-Less Salad plopped in to a chard leaf
Rolled Up & Ready to Eat!
Wanna bite?
Raw Rainbow Wraps Recipe
Ingredients:
- Rainbow Chard leaves (freshly washed)
- Tuna Fish-Less Salad
Directions:
- Fill rainbow chard leaves with Tuna Fish-Less Salad.
- Wrap and roll like a tortilla.
- Enjoy!
Note:
I added a tad bit more water to this batch of Tuna Fish-Less Salad than I did when I posted about it before. It would have been easy to fix that (just add a little more ground flax and/or sunflower seeds) but I decided I liked this consistency a lot and it was great for oozing in to the crevices of the chard leaves. Yum!

What a great blog!!! so glad i found yopu!! you are the closest to me by eating habits, I also mostly eat a meatless and high raw diet, but sometimes I will have fish, lobster, shrimp and some bison!!! VLove your blog! Definetely will follow you!!! And the recipes look awesome!! i will have to try all of them, one by one, note to me!!!

I’m glad you found me, too! It’s awesome that we’re so much alike. Now, I’ve never liked shrimp or lobster but I guess salmon was always one of my favorite things ever. It’s one of the reasons (as I’ve always mentioned here) that I always straw away from a 100% vegan diet.

As long as I’ve been vegetarian and vegan I haven’t really been one for meat and dairy substitutes, but every now and then I really love a great veggie burger. The homemade kind with beans and veg and grains. Yes. So good.
Chard is so stunning! I love using it in wraps but I’m not accustomed to the bitter taste of the raw so I steam it very lightly before using it. Checking out your recipe for tuna-less salad I think I might have to try it – I have a weird sea-food craving right now.

Yeah, veggie burgers are good. I love making ‘em homemade. I’ve even made the raw ones in the dehydrator but haven’t posted about it yet.
I adore chard. Not only is it delicious, nutritious, and beautiful – it’s so versatile and fun to eat!
As for the bitter taste, the smaller leaves aren’t bitter at all. It’s like spinach. Baby spinach leaves are much tastier than the big ones, ya know?

HEY YOU…no crashing today….FINALLY. I hope this stays working so I can keep up better! it’s been such a bummer relying on my evening time to say HI (never happens with JJ)
so HAPPY TUESDAY!
I need to re-introduce my self to swiss chard. I have had it but don’t get it much. not sure why.
I don’t typically participate in “meatless mondays” because I eat more meatless meals then not.
we go in spurts but I do eat fish occassionally and eggs too once a week it seems. the base of my meals is veg and it’s usually when hubs hits the grill that I have a couple bites.
I like it that way. just a little, I enjoy it and back to my vegetables and fruit and grains and what not.
mmm.
I like finding a happy middle ground with all things. food is no different.
well, there’s my novel comment for you! You have me thinking of ways I can add a spoonfull of molassas into things now too!

LOVE chard – definitely happy you’re gonna give it another try.
Well, my meals are meatless (actually I only nibble a little fish once in a while these days) 99.9% of the time but my idea here is to allow my readers who DO eat quite a bit of meat to realize that they can very easily add more raw foods to their diet – without sacrificing protein or feeling bored with their options, ya know? I guess I’ll see how the Meatless Monday theme goes for my readers.

I love the days when I go meatless. It’s not on purpose usually, these are days when my body is craving something green and crunchy.
At most, I have meat maybe once a day. I like the concept of meatless Mondays however.

I think it’s fantabulous that you listen to your body! And I always tell folks – you don’t necessarily have to give up meat all together in order to enjoy more veggies. Just make a whopping salad and plop a little of your choice of meat on top. Easy peasy, eh? But it’s great that you sometimes find days that you’ve gone without meat totally. Yay for you!!!

Every monday for me is a meatless monday!
But I do really love making a yummy pesto, hummus or a chickenless spread using tempeh that always comes out delicious. And I love rainbow chard, I was actually thinking about purchasing some the other day at the store to make some collard wraps since i haven’t had them in ages!

Well, it is for me too but I thought it’d be fun to start highlighting ways my readers (who do eat meat quite often) to enjoy different recipes without meat – and still get their protein in. Some folks really can’t imagine getting protein without meat, ya know? And, besides, I thought it’d give all my readers something fun to look forward to – and hold me accountable for posting a certain topic each week.
I’ve actually never used collard greens as wraps (I’ve used different lettuces, napa cabbage, regular cabbage, etc. – and chard).
And believe it or not, I’m really not a “pesto” person. And I don’t know why. LOL – It just doesn’t really appeal to me?
