I admitted in my last post that I’ve never really been a huge fan of hummus. I mean, it’s okay, I can eat it, it’s good, but it’s never been something I couldn’t live without – but now I’m on a hummus kick! I’ve crossed over to the other side. LOL

You all loved my Jalapeño Hummus Recipe so much, I just had to share my sun-dried tomato hummus recipe with you. It was nice to know I’m not the only one who hasn’t always been madly in love with hummus. But I’m so glad I made this yesterday! Each bite has such a burst of flavor: I taste the sun-dried tomatoes, parsley, and garlic in every. single. bite. It tastes so fresh and delicious. I don’t mean to brag, but I’m just proud of myself for making such yummy hummus!!

Wanna bite?
Sun-Dried Tomato Hummus Recipe
Yields 2 cups
Ingredients:
- 1 can garbanzo beans (aka chickpeas) rinsed and drained
- 3 tablespoons sun-dried tomatoes
- 2 garlic cloves
- juice from 1 lemon
- sea salt and pepper to taste
- 2 tablespoons tahini
- 1 (and a half) tablespoons olive oil (from the sun-dried tomato jar)
- 1 tablespoon parsley (I added an extra teaspoon after a taste test.)
Directions:
- Toss all ingredients into the food processor and let ‘er rip ‘till it’s the consistency you like.
- Do a taste test to make sure you don’t want to add anything else.
- Serve immediately or store in the fridge.
- Enjoy!
Note:
You can absolutely leave the garlic out of this recipe. I heart garlic, but many of you do not.

How do you feel about Jamie Oliver’s Food Revolution? Are you following his show? Do you know who he even is? I’ve known about him for a few years, and always enjoyed his food shows that I’ve seen. Since I first saw him on TV, I loved that he promotes fresh produce and real food. (You can read his food philosophy here.) He isn’t promoting anything outrageous – just sensible meals and snacks created from real food.

Changing my habits to eating real food is how I lost over 100 pounds. So I absolutely believe in Jamie’s mission. I personally admire his courage, passion, and believe he has a genuine, soft heart. And I can’t believe how much resistance he’s been up against for this whole thing. Isn’t it amazing how so many people fight healthy eating/living?
And as I write this, there are almost 80,000 signatures on the petition Jamie plans on presenting to the White House. Would you consider signing? I’m going to I did!

Breakfast
I felt like having cucumber juice for breakfast. I added a scoop of berry flavored Amazing Grass SuperFood powder to it.Yum!

All Shook Up!

Snack
Mid-morning: After breakfast, I drank some herbal tea. I also had a shot of E3 Live and a glass of water with a tablespoon of organic apple cider vinegar.
Lunch + Dinner
I juiced some leftover cantaloupe so it wouldn’t go to waste.
Cool Cantaloupe

(Made about 3 cups. It was about 3/4 juice and 1/4 water.)
Heirloom Rainbow

1 big (heirloom) beet (from my garden)
several (heirloom) beet tops (from my garden)
heirloom lettuce (from my garden)
small (heirloom) bell pepper (from my garden)
4 organic carrots
huge bunch parsley
2 pieces ginger root (approx. 1 inch each)
5 celery stalks
Kinda Mucky Looking

The beet concoction made 3 cups. I diluted it 50/50 and ended up with 6 cups.
Ready to Drink!

Note to self: If I make this beet concoction again, I’ll remember that it included a LOT of lettuce and does NOT need to be diluted. It tasted very bland and just wasn’t fun to drink!
(I added a splash of cantaloupe juice to jazz it up a little.)

Hi, y’all! I’ve missed you!!
I’m working on getting caught up on posting details about my 30-day juice fast. As I mentioned in the previous post, I fell behind because of back pain. Let me tell you, I’d have sailed right on through this juice fast without a problem (as I have many times before) if it hadn’t been for that back pain zapping my strength. It has really, really taken it out of me!
My Mom (who I feel is the fasting Queen) even suggested I go ahead and break the fast early because the back pain was taking so much out of me. I’ve told you before just how stubborn I am, so if a broken juicer wasn’t going to hinder this 30-day juice fast, you know a bad back wasn’t going to make me stop after making it 17 days!! So, I did what I had to do: I stepped away from the blog and focused on the fast–and it worked! Today is day 26 and I’m still juice fasting. The back pain has become easier to cope with and I’m feeling a lot stronger.
I will say that since I gave you the details on day 17, days 18 through 24 I really didn’t sleep well at all. Last night I slept much, much better and feel a lot more rested and refreshed today. Yay!
Note: Although I haven’t blogged daily the past few days, I have kept pretty good notes on each day’s juicing events. So, let’s get caught up, shall we?!
Morning, day 18
Lemon water was first on my mind (as always!)
After that, I got busy making up various juices to have on hand for the next day (which was July 4th and we were having several people over to the house). I started with day 18 breakfast juice: 100% apple juice!
Plate of Apples

6 apples, chopped
(Made 3 cups + my Amazing Grass shaker cup full)
Tasty 100% Apple Juice

While caught my breath and thought about which juice concoctions I’d create, I sipped my yummy apple juice. When it was gone, I cleaned my Amazing Grass shaker cup and started making more juice.
Next up: 100% grapefruit juice.
I forgot to take photos of the 3 grapefruits I used and had already poured a serving into my Amazing Grass shaker cup (so I’d have it to grab for my lunch juice) before I remembered to take a photo. I ended up with 3 cups of grapefruit juice and the following photo is what was left in the container after I poured my shaker cup full. (I also forgot to take a photo of the shaker cup filled with grapefruit juice… guess the back pain was getting to my brain!
)

Cucumbers for Juicin’

I can’t remember for sure because I forgot to count them, but I believe I juiced 5 or 6 cucumbers to make my cucumber juice….
100% Cucumber Juice

Amish-Grown Cabbage Concoction

2 handfuls parsley
3 handfuls spinach leaves
2 small beets
5 (skinny) carrots
2 chunks ginger (about 1 inch or so each)
almost a whole bundle of celery
rest of the Amish-grown cabbage (it was HUGE!)
Gorgeous, Swirly Colors!

Snack
While cleaning up, I had a shot (a tablespoon) of E3 Live and and sipped on a glass of water with a tablespoon of organic apple cider vinegar.
Lunch + Dinner
For some reason, I forgot to write down which juices I drank the rest of the day on day 18!! If I remember correctly, though, I do believe I had a cucumber juice for lunch and the Amish-grown cabbage concoction for my dinner juice. And I know I put a scoop of Amazing Grass Superfood (All Natural) powder in my lunch juice.

Last night I slept so good. It was fantabulous!!
Of course, warm lemon water was first on my list when I woke up on day 17 of this 30-day juice fast.
Breakfast
About an hour after I drank that, I had my breakfast juice. I was extremely happy I had leftover pineapple juice from yesterday morning because I’m getting things ready for company that’s coming from out of town and it was such a relief to be able to grab my E3 Live cup with pineapple juice just waiting for me to drink it.
I actually forgot to take my daily shot of E3 Live today!
I got really busy cleaning and just forgot.
I did get my tablespoon of organic apple cider vinegar in, though.
Keepin’ Cool!

I am absolutely LOVING this shaker cup! It has a super COOL ice wand that you can keep in the freezer and when you’re ready for it, just pop it down in its slot and it’ll keep your juice or smoothie extra cold. This is fantabulous for days when I need to run out the door with juice in hand and I can enjoy a cold drink longer. The E3 Live folks are just awesome for including the ice wand with this shaker cup!
Anyway, I had GREEN PINEAPPLE JUICE this morning because I added a scoop of Amazing GrassGreen SuperFood powder. It was actually really good! Seriously.
Lunch + Dinner
Since I was expecting company from out of town this afternoon, I decided it’d probably make it easier if I juiced lunch and dinner at once. So, I grabbed the following…
Yum!

2 heaping handfuls of heirloom, organic lettuce (from my garden)
2 apples
2 – 1 inch pieces ginger
handful parsley
3 small beets (from Amish produce stand)
1 carrot
2 celery stalks

All Stirred Up

I diluted this one about 60/40 and had enough juice to fill up my E3 Live shaker cup, my Amazing Grass shaker cup, and also had a dab left in the juice machine cup and I drank it straight from that cup!

Actually, after I made this double batch of juice, I got busy cleaning again and preparing for my company and I never drank my dinner juice!! That’s okay, though. I wasn’t craving it and I breezed right on through the day with plenty of energy and never even missed it. I had plenty of regular water and herbal tea as well, so I’m good. And I’ll be loving it in the morning when I can just grab my cup of juice and leave to go run some errands. Makes it SO convenient!
And there you have it… day 17 was a success and I can’t believe tomorrow is day 18!!

I can hardly believe this is day 15 of my 30-day juice fast!!
Last night I slept well again. I jumped up this morning and discovered I was out of lemon! So… no warm lemon water this morning.
I grabbed my Amazing Grass shaker cup, added some ice, a scoop of Amazing Grass Green SuperFood powder and some leftover cucumber-apple juice, and also grabbed my bottle of water with organic apple cider vinegar (a tablespoon) and left to run some errands (including picking up some lemons!).
On the way home, I stopped at that Amish produce stand again and bought some more beets (forgot to take a photo of ‘em this time–sorry!) and then came home….
Lunch
After a busy morning, I decided to drink more of my cucumber-apple juice (it’s so refreshing!!!) and added another (yes, a second scoop for today!) of Amazing Grass Green SuperFood powder. I decided to drink my grass outside.

Dinner Concoction

1 apple
1 celery stalk
1 nob ginger
1 handful spinach
1 handful parsley
5 (heirloom) rainbow chard leaves (from my garden)
4 (heirloom) beet leaves (from my garden)
2 small beets (from an Amish produce stand)

I had drank half of that juice when I realized I hadn’t taken a photo of it! I was getting ready to start this blog post so I just snapped a photo at the laptop.
It was a beautiful, rich color and the taste was simply divine!

Hello, it’s day TWELVE!! Can you believe it?? I can’t! Time is just whizzing by like crazy!
Details
I didn’t sleep all that great last night. I honestly think it was because I wrote a LOT yesterday to meet deadlines and I just overworked my brain. I couldn’t shut it off last night!! That’s a good thing and a bad thing all wrapped in one when you’re a writer/blogger.
I’m feeling okay today, though!
Breakfast
As soon as I got up this morning, I headed straight for my tea kettle. I heated some water and poured it over my half of a lemon to make my usual lemon water. Half an hour after that, I had my breakfast juice…
Since I didn’t sleep all that great, I was feeling just a little lazy so instead of being creative and making a fresh juice, I drank a cup of my defrosted pineapple-strawberry juice.

Snack
E3 Live (I’m LOVING this stuff!!!) and water with organic apple cider vinegar.
Lunch + Dinner
My plan for making my lunch juice was to double the ingredients so I’d end up with enough juice for lunch and dinner later. I’m going to an early July 4th celebration tonight so I didn’t want to be messing with produce, the juicer, and cleaning up later this afternoon.
Creative Chaos!
I ALMOST forgot to take a photo of my ingredients! Some of them had already gone into the juicer. LOL There was a big pile of sprouts on top and I grabbed a handful of stuff to juice, messing that up. Also, one beet is missing from the photo and some spinach. What? I wanted my lunch!

All piled onto a plate (so you can’t see it all):
4 carrots
3 small beets
2 stalks celery
big handful parsley
2 big handfuls spinach leaves
4 kale leaves
nob ginger (about an inch)
2 small-ish apples
chunk of Amish-grown cabbage (shown here)
+ about 2 ounces of Alfalfa sprouts on top!

Prepared!

A lot of folks who juice fast either freeze their juices or make up a little ahead of time (especially if you’re working outside the home) and fill jars up to the very top with the juice and then put the lids on tight. You may lose a little of the nutrients, but it’s waaaaaaaaaaayyy better than storebought juices that are filled with preservatives.
I didn’t dilute the juice that went into my Amazing Grass shaker cup but I did dilute the juice that went into those two glass jars: 50% juice/50% water.

Ready to Shake!

Amazing Grass All Shook Up!

This juice was so sweet and tasty I didn’t even taste the green Amazing Grass powder!! I sure felt the energy it gave me, though. These Amazing Grass powders are rockin’ my world–especially the wheat grass!!
Since it was juice, though, once I got near the bottom of the cup, there was some grainy action goin’ on. That was because I didn’t shake it well enough. It doesn’t bother me. I love to taste health!! I haven’t had the chance to try this powder in a smoothie yet (’cause I’m juice fasting) but I don’t think you’d notice the powder at all in a smoothie.
I’ll probably drink both of those extra juices before the end of the day. I also always, always drink plenty of water and herbal tea.
I just can’t believe tomorrow is day 13 already! It’s craziness. Today was another great day… Yay!!!

I slept pretty good last night but I’ve slept better–especially during long juice fasts. I’m feeling fine today, though!!
Breakfast
Warm lemon water is what I drank first. Half an hour or so later, I decided I’d have fresh grapefruit juice. If you’re a grapefruit lover, you’ll adore fresh grapefruit juice!
Two Grapefruits
(I peeled ‘em before juicin’)

100% Grapefruit Juice

It made about 14 ounces–all for me!!
Fantabulous!!

Snack
Instead of another juice, I had a glass of water with organic apple cider vinegar and my daily dose (a tablespoon) of E3 Live.
Lunch
I felt like switching things up for my lunch juice and I came up with a….
Cabbage Concoction

chunk of my Amish-grown cabbage (shown here)
handful of spinach
2 kale leaves
small apple
half of a lemon (peel, seeds and all)
1 carrot
1 celery stalk
nob ginger (about an inch thick)
handful of parsley
Love the Colors!

Spicy!

I actually loved the spicy flavor of this green juice but if you don’t like ginger or spicy flavors, you’ll want to leave the ginger out of this one or use way less.
Snack
No afternoon snack today. I just had some iced herbal tea with lemon.
Dinner
I sat out that container of frozen pineapple-strawberry juice from yesterday earlier today and just had a cup of that. I felt like having a simple dinner, so I did!
That’s it for day 11. And I’m happy with how it went!

I didn’t sleep that well last night but, surprisingly, I wasn’t that tired or feeling that bad this morning. It’s crazy how a juice fast keeps my energy level up–even when I don’t sleep that well. I just kept waking up for some reason!!
Breakfast
My day began (like always) with a hot cup of lemon water (more about this below in a reader’s Q & A !!
)
I was craving pineapple juice, so that’s what I made! I am loving being so in tune to my body! These longer juice fasts are so serene and holistic for me.
On to the morning juice concoction…
Pineapple, Chopped
(The whole thing except the leaves)

Added 6 Strawberries

+ a Scoop of Amazing Grass!

Amazing Grass Green SuperFood

My Breakfast!
(Don’t let the green fool you–it was berry-licious!!)

Besides my Amazing Grass shaker cup, I had enough pineapple-strawberry juice to share 3 small-ish glasses with family and store the container below (which holds 3 cups) in the freezer. I also made a few popsicles for later. Yes, you can have your juices frozen as popsicles while juice fasting!! How fun is that–especially in the summer time??!!
For Later
(I hear pineapple-strawberry juice is so yummy frozen and thawed–like a slushy!!)

After my juice, I had a glass of water with organic apple cider vinegar.
Snack
I had my daily shot (a tablespoon) of E3 Live and a tall glass of iced, herbal tea with lemon. Yum!
Lunch
For lunch, I finally decided to try the juice concoction Jenna keeps raving about. Jenna, over at Eat, Live, Run keeps talking about the following juice. And I keep forgetting to pick up ginger root at the grocery store so I haven’t been able to make it until today! I searched Jenna’s site and discovered she also plays around with her recipe. She sometimes adds cucumber or half a lemon to the recipe but I went with her original version today…
New Concoction!

2 small beets
1 green apple
2 stalks celery
1 carrot
1 nob ginger (about an inch thick)
Note: I absolutely adore how there was just a hint of ginger in each sip. It wasn’t overpowering, but it was definitely there, tickling my tongue and throat! I didn’t dilute this one. Yum!

Snack
For an afternoon snack today, I had a homemade pineapple-strawberry popsicle (from my breakfast juice). It was sooooooooo delicious! I enjoyed this yummy treat outside.

Dinner
Tonight’s dinner was inspired by yesterday’s lunch–but I tweaked the recipe a little to come up with…
Kale Kreations!

2 apples
2 carrots
1 small beet
2 kale leaves
handful of spinach
nob and half of ginger
few sprigs of parsley
(The recipe shows 2 carrots and 2 apples because I threw another of each in the juice after the photo just to make a little more juice.)
Rainbow Swirls!

Why do you drink warm/hot lemon water first thing every morning?
Answer
Lemons are loaded with goodies your bodies need such as Vitamin C and heart- and cancer-fighting compounds like limonin and limolene. I love them. I have been drinking warm lemon water each morning before breakfast for a long time now. My Mom is a HUGE advocate of lemons and we have been having them in our iced tea for oodles of years. The warm lemon water (drank on an empty stomach) helps alkalize the body, jumpstarts your liver and bowel and flushes your kidneys and bladder. It’s very cleansing to your body. Lemons boost your immune system, lower histamine levels, and help give your skin an overall healthy glow. I definitely feel less energetic and have less “umph” on days I don’t get my lemon!
Hope that helps you understand my obsession with warm lemon water.
